For vegan chocolate frosting
- 1 1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 cup granulated sugar
- 1/2 tsp salt
- 1 cup unsweetened almond milk (or any plant-based milk)
- 1/2 cup vegetable oil
- 1 tsp pure vanilla extract
- 1 tbsp apple cider vinegar
Baking Instructions
Step 1: Preparation
Preheat your oven to 350 °F / 175°C and line a cupcake pan with 12 paper liners.
Step 2: Prepare a batter
Take a large bowl and mix together all the dry ingredients: flour, cocoa powder, baking soda, sugar, and salt. In another bowl, combine the almond milk, vegetable oil, vanilla extract, and apple cider vinegar and stir well. Now add the mixture to the bowl of dry ingredients and whisk well until no lumps are left.
Step 3: Fill the cupcake liners
Once the smooth consistency is achieved, pour the mixture into the cupcake liners until each is about filled about two-thirds. (Note: Don’t fill to the top, as it will leave no room for the cupcake to rise)
Step 4: Bake
Bake the cupcakes for about 20 minutes. Let the cupcakes cool on a wire rack.
(Tip: Do the toothpick test by inserting the toothpick in the centre, and if it comes out clean, it indicates the chocolate cupcakes are fully baked. If not, bake for another 2-3 minutes and repeat the test.)
Step 5: Prepare vegan frosting
To prepare vegan frosting for the vegan cupcakes, you will need the vegan butter. Beat the butter in a bowl until its consistency becomes creamy, then add other ingredients: cocoa powder, powdered sugar, almond milk, and vanilla extract. Beat the mixture well until its texture becomes smooth and creamy, and your vegan frosting is ready!
Step 6: Decorate the cupcakes
Once your chocolate cupcakes are completely cool, use a spatula or piping bag to create designs on the cupcakes for an extra touch of perfection. For decoration, you can also use vegan chocolate chips or sprinkle a few chocolate flakes to make your chocolate cupcakes more scrumptious. And your delicious homemade vegan cupcakes are ready to serve!
(Note: Never put frosting on the warm cupcakes as it will melt the cream, causing a mess and ruining your design. Always wait for cupcakes to cool down completely.)
