- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 tsp baking powder

- 2 tsp pure vanilla extract
- 1 tbsp apple cider vinegar

- 1 tsp pure vanilla extract
- 2-3 tbsp almond milk

1 Preheat the Oven: Preheat your oven to 350°F / 175°C and line a muffin tin with cupcake liners.
2 Mix the Ingredients: Take a large mixing bowl and whisk together the flour, sugar, baking powder, baking soda, and salt. Now, in a separate bowl, add all the liquid ingredients: almond milk, vegetable oil, vanilla extract, apple cider vinegar, and whisk mix.

3. Prepare the Batter: Add the liquid mixture to the centre of the flour mixture and hand whisk to remove any lumps.
4. Bake Time: Fill each cupcake liner about two-thirds full with the cupcake batter. Place it in the preheated oven and bake for 18-20 minutes. Check if the cupcakes aren’t baked completely, bake for 2-3 more minutes. (Be careful about the timing; do not overbake)

Prepare Frosting: To prepare vegan frosting for your vegan cupcakes, take a bowl, add dairy-free butter and beat, then gradually add powdered sugar and vanilla extract, and beat until smooth and creamy frosting is ready.
